This wheat berry is a light-colored wheat berry that is high in protein. With that high protein content it has a mild flavor that produces luxurious golden-brown baked goods. All Palouse Brand products will sprout and are non-irradiated (an accepted practice that exposes your food to radiation for sterilization). We grow it, harvest it, truck it, process it, bag it and get it to you - it never touches a middleman.
